
Not only is it important to maintain the right amount of “chill” when you prepare to gather with others, but also it helps to keep the right mindset – open and willing to enjoy the quirks and qualities every person brings. Opening your home to someone without fuss is making yourself vulnerable to your guests, showing them a piece of your real self.

You can keep the same low-key attitude with ice cream, but we experimented with high-quality, all specialty brands: shown above are Rebel Salted Carmel (Keto ice cream 1g sugar), Nicks Mint Chocolate chip (Swedish-style light ice cream), Jeni’s Birthday Cake, Ice Cream for Bears (sweetened only with honey), Louisville Cream Mascarpone and Strawberry, Louisville Cream Pistachio Honeycomb (both made in Louisville). When you elevate a common food, you surprise your guests and your own tastebuds. You can just serve the pints, but we sandwiched them between some delicious homemade treats.

An ice cream sandwich is nostalgic, practical, and delicious. In the above photo, we made Martha Stewart’s brownie cookies for the outer cookies and tried different flavors of ice cream as the filling. They had the crunch and chocolate that worked perfectly with the inside creaminess.

We also experimented with Belgium waffles with the creamy, local Louisville Cream. The flavors we tried were mascarpone strawberry and Pistachio Honeycomb. We even put some maple syrup and fresh strawberries on top for a sweet combination.
